EMERALD MATCHA PICK-ME-UPS (makes 20, 1 teaspoon-sized balls)

Printable recipe: Emerald Matcha Energy Bites

Ingredients:

  • 1 cup shredded toasted coconut
  • 4 tablespoons almond meal
  • 2 tablespoons maple syrup (or to taste)
  • 1 tablespoons coconut oil
  • 1 tablespoon organic Matcha Green Tea powder (Rishi and Mighty Leaf are both great brands)

Instructions:

  1. Place all ingredients in the bowl of a food processor. Pulse until thoroughly combined.
  2. Use a teaspoon to scoop the mixture and roll into balls with your hands.
  3. Store, tightly sealed, in the refrigerator.
